She is coming to visit this year and I am lucky enough to have my beautiful Mother’s Day weekend with her. (the weather seems perfect this weekend!)

It’s a special Easter weekend and we have something special too. Agedashi Tofu – a popular Japanese appetizer in a sweet and savory ginger sauce. It is a traditional Japanese tofu dish. Instead of the fish stock that the regular Agedashi Tofu made of, we use our house made mushroom stock. Super healthy and delicious. First of all, what is matcha? It is a powdered form of steamed and dried green tea leaves that is a mood-enhancing, antioxidant powerhouse, a natural weightloss aid, pH balancer and detox agent. It has much higher disease-fighting polyphenols, called epigallocatechin gallate (EGCG) than any other green tea (about 10 times higher). It is much more nutrient dense than standard green tea, our new superfood! Making matcha latte takes a bit of patience. If the water is too hot, it will ruins the delicate flavor of matcha and doesn’t allow the nutrients to slowly release and open up as it should. You will need a set of tools to make a smooth and anti-oxidant rich matcha latte. Save the hassle! Just come to our restaurant and we will have it ready for you! immatchal

We don’t use plain old sugar (table sugar, white sugar, or refined sugar) that most of the restaurants and even other “vegetarian” or “vegan” restaurants use. Why? Even it costs so much more? Here’s why (from PETA): “Bone char, which is used to process sugar, is made from the bones of cattle from Afghanistan, Argentina, India, and Pakistan. The bones are sold to traders in Scotland, Egypt, and Brazil who then sell them back to the U.S. sugar industry. The European Union and the USDA heavily regulate the use of bone char. Only countries that are deemed BSE-free can sell the bones of their cattle for this process. Bone char—often referred to as natural carbon—is widely used by the sugar industry as a decolorizing filter, which allows the sugar cane to achieve its desirable white color.” “Bone char is also used in other types of sugar. Brown sugar is created by adding molasses to refined sugar, so companies that use bone char in the production of their regular sugar also use it in the production of their brown sugar.” sugar   Why Organic Sugar? One simple explanation – since bone char is not on the National Organic Program’s National List of Allowed and Prohibited Substances, certified USDA organic sugar cannot be filtered through bone char.

Valentine’s Day is right around the corner, but that doesn’t mean you need to scramble for a last-minute gift! We have a simple and proven recipe for you to show your love to your loved ones. (Or, simply give us a call #773-275-8797 or visit us to buy some delicious beautiful vegan chocolate covered strawberries.) See below for the recipe. chost.jpg Ingredients: 1 Pound of Fresh Strawberries 6 Ounces of Dark Chocolate Chips (make sure it is vegan with organic sugar) 2 Tablespoons of Coconut Oil *Parchment paper (wax paper) Step 1: First begin by washing your strawberries well, and then pat dry the strawberries using a paper towel. Once dried, refrigerate them while you melt your chocolate chips. Step 2: Pour your vegan chocolate chips into a microwavable ceramic or glass bowl.  Add 2 tbsp. of coconut oil to the vegan chocolate chips and stir until all chocolate chips have been coated in coconut oil. Microwave the chocolate chips for 30 seconds, take the chocolate chips out and stir well. Microwave for another 30 seconds and stir again. At this point, the chocolate chips might not be melted fully, but continue to stir and it will finish melting within the bowl. Step 3: Remove the strawberries from the refrigerator.  Hold the strawberries carefully from the stem and begin to dip them into the chocolate bowl, they should be fully covered in chocolate. Carefully tap the strawberries on to the rim of the bowl to remove any excess chocolate drizzling down. Line a tray or plate with parchment paper (wax paper) and place the strawberries on the lined tray or plate one by one. The parchment paper will prevent the strawberries from sticking on to the tray or plate. Now, refrigerate for a few minutes and enjoy with your loved ones! HAPPY VALENTINE’S DAY! P.S. Because we have a sincere respect for all living things and we wish to live honestly and make as little of an impact on our ecosystem as possible. It really is that simple. Love We believe that a vegan lifestyle is rooted in love. Love for animals, of course … but also for our fellow man. By following the tenets of vegan living, we are being good to Mother Earth. We are creating less waste, demanding less energy output, using less water, and living with intention in our heads and love in our hearts. We are the citizens of the world that we want to be when we follow a vegan diet – and we are proud of loving vibes that we are putting out into the universe. The love that we put into our food has other benefits too. It’s delicious! We are our most proud when non-vegans tell us how much they love our food; how satisfying and flavorful they find it to be. Love inspires more love, it seems. That’s what makes our little vegan restaurant so special.
